Dovetail Distillery was conceived in 2016 by Nicholas Cataldo. Before opening Dovetail Distillery, he was a chef for over 20 years. He spent most of his career working in top restaurants in NYC. He got started in distilling while making a sauce for a dish he was working on. He spent almost 3 years working on a recipe that brought out his favorite grain, oats. Dovetail Distillery now has a unique product unlike anything on the market.
When it comes to whiskey, Dovetail Distillery stands apart as the oat comes through in the final product, it is not just an element in the mash bill. White Dove, traditional unaged whiskey has an upfront bit of spice with sharp grassy tones that are followed by a soft caramel finish. Our Award winning Cut Throat whiskey (aged in small barrels) starts with a strong spice, and brings scents of leather, burnt honey & clove while tasting of raisin, chocolate, caramel, and allspice.
Our cask strength BTLGGR is a culmination of all the flavors of Nevada, condensed and bottled at full potency. Dovetail strives to re-create a piece of American history by walking in the footsteps of the homesteaders that first settled the American west. We do things the way they would have by using the ingredients and techniques available to those on the frontier.
