A Chef's Journey to Whiskey

Dovetail Distillery came to life in 2016, born out of my passion for both cooking and distilling. Before diving into the world of spirits, I spent nearly 20 years as a chef in some of NYC's top restaurants. My journey into distilling began somewhat while I was making a sauce for a dish. I connected with some knowledgeable folks in New York who introduced me to the workings of a distillery, and from there, I was hooked. Over the next three years, I focused on developing a recipe that would bring out the best in my favorite grain—oats.

 

Looking back, there are two milestones in my life that I hold dear. One is my signature white-on-white culinary display, which earned me recognition as a chef. The other is the simple pleasure of receiving oatmeal-raisin cookies from my mother every year for my birthday and Christmas—a tradition that inspired the essence of our Dove product.
